Happy Monday friends! As promised, this week I'm sharing one of my own recipes. We enjoy eating chia pudding, and like I've mentioned before I do not consider myself to be a cook in any way, I call my mom for recipes, or I check Pinterest when I feel like trying something new. I enjoy chia pudding and fruits, it's a regular thing I'll make, for breakfast, or a snack throughout the day. So this week I'm sharing with you a Blackberry Chia pudding that I enjoy eating any time of the day, especially after a long run on the weekend.
- 1 cup Blackberries
- 1 1/2 cup Coconut milk (or any milk of your choice)
- 1/4 cup Chia Seeds
- 1 tbsp Maple Syrup
- 1 cup Frozen Mangoes
- Blend together the blackberries, coconut milk, and maple syrup until it is smooth. Pour it into a bowl, add the chia seeds and set it aside. I usually put it in the fridge for about 20min. When the pudding is ready, blend the frozen mangoes with a 1 cup of water.
- Put the blackberry chia pudding into a cup or bowl, add the mango mix on top. Add any toppings you like, extra fruits or granola. I like the granola toppings for breakfast.
There you have it a blackberry chia pudding, it's so easy and so tasty. Most days I'll make the pudding the night before so it's something easy to grab and eat in the morning. What are some of your favorite chia pudding recipes?
